    MOZ is crafted on our family farm in Ballyneety, in the parish of Knockanore, County Waterford. At its core is a simple idea: single-herd milk from our pedigree Friesian cows, shaped by the care of the farm and the traditions of Italian cheesemaking.

    Rooted in Ballyneety

    Nestled in the rolling countryside of Ballyneety, in the historic parish of Knockanore, County Waterford, the Lonergan family farm is where the MOZ story begins.

    For generations, the Lonergan family has farmed these fertile lands, caring for the animals and countryside that make their dairy products possible. Today, that tradition continues with a shared commitment to quality, sustainability and animal welfare.

    The farm is home to a single herd of pedigree Friesian cows, grazing on the lush green pastures that surround the farm. Benefiting from Waterford’s mild climate and abundant rainfall, the cows enjoy a grass-based diet for much of the year, producing the high-quality milk that gives MOZ its fresh, delicate character.

    From the Parlour to Cheesemaking

    Great mozzarella begins long before the cheesemaking process starts. It begins in the fields, with healthy, well-cared-for cows and a farming tradition built on respect for the land.

    With the cheesemaking facility sitting among the fields and cows, the journey from parlour to finished cheese is exceptionally short. That close connection helps preserve freshness, quality and the clean milky character of MOZ.

    Handled with care and transformed in small batches, the milk becomes a fresh Fior di Latte mozzarella with the clean flavour, soft texture and freshness that make it distinctive.

    Italian Craft

    MOZ brings together fresh Irish milk from a single herd and the traditions of Italian mozzarella-making.

    Inspired by Fior di Latte — the traditional Italian cow’s milk mozzarella whose name means “flower of milk” — MOZ is crafted to be fresh, delicate and versatile. The process depends on timing, skill and care, transforming high-quality milk into mozzarella with a soft texture and clean, milky flavour.

    It is an Irish-Italian collaboration in the truest sense: Single herd Irish milk from the Lonergan family farm, Italian craft and a shared respect for quality.

    Eamonn Lonergan and his family have been producing award-winning farmhouse cheese, using milk from their single herd of pedigree Friesian cows for more than 40 years.
